SNACKS- Choc Chip Cookies

(BAKE FOR COOKIES OR EAT RAW AS COOKIE DOUGH)

INGREDIENTS

3 cups almond meal

1/2 cold pressed coconut oil

3 tbsp raw local honey

1/2 tsp baking soda (aluminium free)

1/2 tsp Celtic sea salt or Himalayan rock salt (fine)

1 tbsp vanilla essence (or substitute with pure vanilla bean for an even healthier option)

100g loving earth raw chocolate of choice, chopped (I enjoy using the creamy coconut mylk or dark chocolate)

METHOD

Pre-heat oven to 180°C.

Place all ingredients except for chocolate pieces into your food processor (or strong blender) and blend until well combined, you may have to give the mixture a helping hand by scooping down the sides until the coconut oil spreads itself evenly throughout the mixture.

Once well combined, stir the chocolate pieces through and roll mixture out into bite size balls and flatten into cookies.

BAKE in oven for 8 - 10 minutes or until golden brown, and allow to cool before handling. The mixture doesn't take long to cook so keep your eye on it, and will crumble if you handle it before it has cooled and set.

Alternatively you can enjoy this mixture unbaked, as raw cookie dough!
