This creamy cashew cheese is not only delicious, but it is nutrient and mineral rich!

SNACK- Cashew Cheese


2 cups of raw cashews

2 - 3 cloves of garlic

1 tsp garlic powder

1 tbsp olive oil

1 handful of fresh rosemary

1 tsp Celtic sea salt

2 tbsp raw apple cider vinegar

2 probiotic capsules

1/2 - 1 cup of water


Soak the raw cashews in enough water so they are submerged with extra room for them to expand. Cover and soak for four hours.


Drain and rinse the cashews, place them in the high-powered blender along with all other ingredients except for the water, probiotic capsules and raw apple cider vinegar. Add 1/2 a cup of water and blend until a smooth consistency forms, you may need to scrape the sides and let the blender rest every now and then so it does not overheat. Add more water as you need, but don't exceed 1 cup as the consistency will become too runny. Once you have a smooth consistency empty the creamy mixture into a jar, then empty the contents of the two probiotic capsules and raw apple cider vinegar, and stire through until well combined. Cover with a tea towel and sit on the bench overnight, give it another a stir in the morning then place the lid on the jar and store in the fridge for one more day, once cooled it is ready to enjoy!
