SNACKS- Choc Peanut Raw Balls

INGREDIENTS

1/2 cup raw or activated cashews

1/2 cup unroasted peanuts (or unroasted natural crunchy peanut butter)

1/2 cup cocoa nibs

1/4 cup cacao powder

1/4 cup coconut oil

1/4 tsp pure vanilla bean powder

1/2 tsp Himalayan salt (do not use iodised salt)

3 medjool dates (pitted)

2 handfuls of amaranth puffs (to roll balls in, optional)

METHOD

Blend raw cashews and peanuts in a blender until a crunchy butter-like texture forms (if using peanut butter blend the cashews on their own and mix in peanut butter in the next step), then add all other ingredients except for the amaranth puffs, and continue to blend.

I added a drizzle of filtered water to help my blender out when things got too sticky, but see how you go, ultimately you want a sticky but relatively smooth texture that you can roll into balls.

Spread the amaranth puffs out on a plate or chopping board, scoop mixture out of blender with a spoon and roll into balls. Roll balls in amaranth puffs and then place in glass container in the fridge to set.

This recipe makes about 12 balls, they are such a great afternoon pick me up treat, enjoy!
