This is not your average guac, it is filling and refreshing!

SIDE - not just guac (guacamole)


2 medium avocados

1 medium carrot

1 medium and ripe tomato

1/4 red onion

1 large clove (or 2 -3 small cloves) of garlic

1 tsp fine Celtic sea salt or Himalayan rock salt


Smash the garlic with the side of your chopping knife and leave to sit for a minute before removing the skin and chopping very finely. Scoop out the flesh of the avocado into a mixing bowl, and mash with a fork. Wash the carrot, cut the ends and finely grate, then dice the tomato and finely dice the onion, add all of the ingredients into the mashed avocado and stir through until well combined. Enjoy!
