MEAL- Marinated Mushroom Lettuce Wraps


Fresh lettuce (cos, butter or icebergs lettuce recommended)

1 avocado

1 medium beetroot

1 red capsicum

Marinated mushrooms


Rinse and scrub beetroot and capsicum, cut off the ends and cut into sticks. Cut lettuce stem and rinse leaves. Cut slices from the avocado. Line up all salad ingredients on the widest edge of the lettuce leaf and top with a dollop of the marinated mushrooms. Gently roll the leaf and ingredients up. Enjoy!
