SNACKS- Raw Energy Balls

INGREDIENTS

1.5 handful activated almonds

1.5 handful activated brasil nuts

1 tbsp chia seeds

1 handful goji berries

6 medjool dates (pitted)

1 tbsp raw unhulled tahini

1 tbsp manuka honey

1 tsp spirulina

1 tsp chlorella powder

½ tsp vanilla bean powder

250g raw chocolate chopped

Desiccated coconut (the amount needed changes each time depending on how much you use to roll, and how big of a splash of coconut water you do)

METHOD

Place nuts in blender and chop them roughly. Add dates, tahini, manuka honey, spirulina, chlorella, vanilla bean + chia seeds, blend. Add coconut water as needed, to make a doughy texture.

With a spoon mix in goji berries + raw chocolate chunks, then add desiccated coconut to create a more solid consistency to form into balls.

Pour desiccated coconut onto a chopping board and roll balls through it, before placing them in a glass container in the fridge. Let them sit in the fridge for at least half an hour then enjoy!

Can be stored in the fridge for up to two weeks.
