A fun way to eat salad!

LUNCH- Salad Filled Lettuce Wraps with Guacamole


Fresh lettuce (cos, butter or iceberg lettuce recommended)

1 medium beetroot

1 medium carrot

Guacamole (1/2 the serving)


Rinse and scrub carrot and beetroot, cut off the ends and cut into sticks. Cut lettuce stem and rinse leaves. Line up a carrot and beetroot stick plus a spoonful of guacamole on the widest edge of the lettuce leaf, gently roll the leaf and ingredients up. Enjoy!
