MEAL- sun-dried tomato, baby spinach + cashew cheese Carrot Noodles

INGREDIENTS

10 sun-dried tomatoes

2 small carrots ( I used one orange carrot and 1 purple for fun)

1 handful of baby spinach leaves

5 tbsp of cashew cheese

METHOD

Scrub and rinse the carrots, chop off the ends and spiralise using a spiraliser into a medium mixing bowl. Rinse and drain the baby spinach leave, chop up finely, dice the sun-dried tomatoes and place into the mixing bowl, stir through 5 tbsp of cashew cheese until well combined. Empty into a serving bowl and enjoy!
