MEAL- Vegetable Chili

INGREDIENTS

2 medium carrots

3 celery stalks

1 vine ripened tomato

1/2 red capsicum

1/4 red onion

SAUCE

1/2 red capsicum

5 sun-dried tomatoes

1 vine ripened tomato

1/2 jalapeno red

1 tbsp sesame oil

1 tsp sweet paprika

1 tsp Celtic sea salt

1 clove of garlic

VEGETABLE MINCE

1 1/2 cups activated walnuts

1 tsp cumin seeds (or powdered)

1 tsp cayenne pepper powder (add 1 more tsp if you want spicy!)

METHOD

Rinse and chop the red capsicum in half and dice, place half in the blender (for the sauce) and half into a large mixing bowl. Rinse and scrub the rest of the vegetable ingredients, slice the celery, finely dice the red onion and grate the carrots, place them in the large mixing bowl and set aside.

Combine all sauce ingredients into your blender and process until a smooth even texture forms, empty into the mixing bowl and set aside (no need to rinse your blender, we're going to use it for the vegetable mince).

Now combine all of the vegetable mince ingredients into the blender and blend until combined, aim for a chunky texture. Empty the mince into the mixing bowl and stir everything through until well combined. Slice up the other half of the red jalapeno and use to garnish each dish.

This recipe makes enough for two servings.

OPTIONAL you may like to add sliced mushroom to the dish and serve with fresh avocado and/or coriander. Enjoy!
