An extra filling dish, loaded with good fats, and a pleasant combination of both creamy and crunchy textures!

MEAL- sun-dried tomato baby spinach + cashew cheese carrot noodles Topped with Avocado +Sesame Seeds


10 sun-dried tomatoes

2 small carrots ( I used one orange carrot and 1 purple for fun)

1 handful of baby spinach leaves

5 tbsp of cashew cheese

1/2 an avocado

1 tbsp raw sesame seeds


Scrub and rinse the carrots, chop off the ends and spiralise using a spiraliser into a medium mixing bowl. Rinse and drain the baby spinach leave, chop up finely, dice the sun-dried tomatoes and place into the mixing bowl, stir through 5 tbsp of cashew cheese until well combined. Empty into a serving bowl, slice half an avocado and place on top of the noodles, sprinkle the sesame seeds and enjoy!
